Cashew butter Granola Bars/Balls

You can use an 8x8 baking dish spread this out flat and cut it into bars OR roll it into balls

Ingredients:

  • 1 cup very smooth creamy natural cashew butter (can use peanut butter if desired)

  • 2/3 cup raw local organic honey

  • 1 tsp vanilla extract

  • 1/2 teaspoon sea salt

  • 2 1/2 cups organic whole rolled oats (Bobs Red Mill is what I use)

  • 1/3 cup Enjoy Life chocolate chips

  • 3 tbsp pepitas

Instructions:

  1. gather your 8x8 pan or container if rolling into balls.

  2. In a medium bowl, stir together the cashew butter, honey, vanilla, and salt until smooth. You may need to leave the cashew butter out for a bit if it’s been in the fridge to soften up.

  3. Add the oats, chocolate chips, and the pepitas. mix really well turning over and getting the dry mix at the bottom blended in well.

  4. Press into pan. If making balls, you may find it helpful to put in the fridge to firm up a bit to make rolling less sticky and more efficient.

  5. Chill in the fridge for 1 hour and store them in the fridge.
